When I wrote my first post for the SMA Nutrition Come & Wean With Us campaign a few weeks ago, P3 was quite happily plodding along in her weaning journey with little struggles if I’m honest. Since then our weaning journey has changed quite significantly. P3 is learning to feed herself completely, when I say completely I really do mean it. Everything from fromage frais to roast dinner and the mess is phenomenal!
I was challenged by Sheree Murphy to cook the Chicken & Apple Balls recipe. The video of Sheree taking us through it step by step is below:
With our current change in our journey of discovery, I was feeling very apprehensive about spending ages cooking for P3 when her taste buds are changing. My biggest concern is also that she won’t allow me to feed her the fromage frais that we used to use to “top her up” when we thought she hadn’t managed to feed herself enough. I needed her to like the Chicken & Apple Balls.
The recipe includes just four ingredients which to me makes the perfect weaning food because it is quick and doesn’t take too much preparation. 1 chicken breast, 1 onion, 2 slices of bread and an apple.
After dicing the onion, grating the apple, chopping the chicken into tiny pieces and turning your bread into crumbs, all you have to do is mix it all together. Then squeeze together around 20 small balls. Make sure they are really stuck together, I’m awful when it comes to making meatballs as they always fall apart.
Then you cook them in shallow oil until golden brown, turning them every so often. The Chicken & Apple Balls were so quick and easy to make, I was really shocked. They smelt delicious but I was still extremely nervous about how P3 would take to them.
I needn’t have been worried. I don’t think I’ve ever seen her scoff a piece of food so quickly. She had 3 chicken balls in total and polished the entire plate off leaving no crumbs behind. To me they tasted a bit like onion rings with a twist. My older daughters also enjoyed these and they are perfectly hand sized to take out and about for a little snack or for a picnic. This is such a simple food to create and easy for anybody to eat.
