Late Night Baking

I did a bit of rushed baking tonight… The end product tastes gorgeous but I’m not pleased with the look of it.

It is meant to be a dotty sponge. I’d seen a post on Facebook that inspired me to try my own.

Recipe (My own)
175g self raising
175g caster sugar
175g unsalted butter
3 eggs
3 tablespoons milk
Gas mark 4

Mix all the ingredients together. Then halve the mixture.
I was multitasking with sausages in a frying pan and accidentally poured the colouring in before halving the mixture which is the reason for this cake not turning out how I want it. Luckily I managed to get one half pink and one half red.

I bought a special silicone cake pop mould from eBay. It comes in two halves. I definitely didn’t put enough mixture in the moulds so it created more of a dome than a ball. But I’m really happy with the results of the cake pops to be honest!

I wanted to use a round cake tin but I hadn’t made enough cake mixture. So out came the loaf tin. I put some of the pink mixture into the bottom and then popped 6 of my domes into the loaf tin. Then poured the rest of the mixture on top.

This was the finishing result. Next time I’ll definitely use two totally different colours.

At least it tastes nice!
