What’s Your Flavour This Pancake Day? #NumNomsFoodie

Happy Pancake Day! Or Shrove Tuesday. It’s the last day to feast before Lent and Shrove Tuesday is more traditionally known for a day of consuming pancakes. We love pancakes in this house especially P1 and we have them every weekend when there’s time to stand and make them. 

But this pancake day the team at Num Noms have challenged us to create a recipe inspired by our favourite Series 3 Num Noms specifically for today. We were sent the rather cute and bright Series 3 Lunch Box which has twelve loveable Num Noms. I quickly got to work thinking of some ideas whilst staring at the Num Noms for what felt like forever.

I took inspiration from Maple Sugars, Cherry Ann and Peyton Peppermint. Now bare with me, I know that the ingredients don’t really match the Nums picked but I’ll explain. Maple Sugars relates to the actual pancake for me, she’s pancake coloured and maple syrup is P1s favourite topping. Cherry Ann is relating to the strawberries, I felt like a cherry is a fruit and I wanted to include one of P2s favourite fruits which is a berry of some sort. Then I definitely wanted something sweet so picked Peyton Peppermint to represent our sweet treats of chocolate sprinkles and Nutella. Here’s the recipe to follow for these cute mini pancake stacks:

Ingredients:

  • 3 large free-range eggs
  • 115 g plain flour
  • 1 heaped teaspoon baking powder
  • 140 ml milk
  • Strawberries
  • Nutella
  • Chocolate Sprinkles
  • Cocktail sticks or Kebab sticks

How to make them:

  1. Firstly, separate the eggs. You need to keep the whites into one bowl and the yolks in another.
  2. Start by whisking the egg whites with a pinch of salt until they are stiff and white. This can take some time so do use an electric whisk if possible.
  3. Mix the flour, baking powder and milk with the egg yolks. This should form a smoother batter.
  4. Plop the stiffened egg whites into the middle of the batter and gently mix together.
  5. In a non-stick pan over a medium heat, pour some of the batter into the pan creating roughly five mini pancakes in the pan at one time. Cook for a couple of minutes on each side. I used about a tablespoon of mixture for each mini pancake. You want them to be roughly the same size.
  6. Whilst they are cooking you can chop up your strawberries into slices.
  7. Once the pancakes are ready, spread a small amount of Nutella on one side of pancake and then place a strawberry on top, followed by another spread of Nutella. Then pop another pancake on top of that and once again another Nutella. It should look like a strawberry sandwich.
  8. Sprinkle some sprinkles on top and then pierce a cocktail stick through the middle.
